Quarantine Eating

I enjoyed preparing and cooking meals before quarantine, but I’ve been doing much more cooking and trying new recipes the last couple of months.

This jackfruit banh mi is a winner. I’ve made it twice. It’s super easy, not time consuming and delicious. I’ve found so many great vegan recipes on this site. Next trip to the store will be to pick up a yellow squash and sweet potato so I can make these black bean enchiladas. Add chips and pico de gallo to the list. If the tomatoes look good I will make it from scratch. I need my tex mex fix!

Last week I made a Grilled Portabello and Roasted Red Pepper sandwich from Marlene Watson-Tara’s beautiful book, Go Vegan. I’ve made it so many times in the last year, I don’t need to look at the recipe to remember the measurements.

An old favorite is chickpea of the sea. Great for a snack with crackers, on a sandwich, or wrapped in lettuce. I don’t follow an exact recipe. Sometimes I add apples or raisins or pickles or capers, but basically it’s made the way you would make tuna salad. I always chop the celery and onion super fine. I haven’t been able to find ume vinegar at the store, and I ran out a couple weeks into quarantine. I hope it resurfaces soon, I use it for tahini dressing as well. I’ve been using apple cider vinegar as a substitute. It works in the meantime.

About a month ago my whole yard was filled with dandelions, I remembered making dandelion pancakes a couple of years ago. That was the last time I ate pancakes, but early in quarantine I thought, why not, the whole yard is filled with them and I have time! I found this recipe that uses bananas. They were delicious.

One thing I miss most (aside from Ume Vinegar) is the bulk section for whole grains, beans, and nuts. I am almost out of brown rice. Ran out of garbanzo beans. A friend gave me some of her surplus quinoa. I’m out of walnuts and almonds. Which reminds me that I made arugula salad with quinoa, apricot, and avocado and green goddess dressing sometime in the not so distant past.

I haven’t done any take out yet, but I don’t do take out often normally. I like that my new normal is experimenting with new recipes. (Craving some Bún from La Cai!)
